Create your "Go to" Dish

As I continue to travel on my own lifelong journey to better health and wellness, I look back at the progression I've made along the way. Finding my "go to" dish was one of the more impactful of these progessions. A "go to" dish is that food item that is easy to make, flexible to your lifestyle and healthy. It is that item that you feel good while eating and feel good after having eaten. For me that item is a simple beans and rice combination. I discovered my "go to" dish when I still had two kids living at home and we had crazy evening schedules, filled with homework, sports practice and sundry chores. It started with a recipe requiring only a handful of ingredients and has since morphed into an opportunity to introduce wonderful vegetables and herbs that I have on hand at the time. I also now play with a handful of spices I have in my cabinet. I can serve it "as is," roll it up in a tortilla or stuff it in a taco. Cheese or no cheese, fresh avocado or guacamole, salsa or no salsa, I mix it up and play with the flavors. Leftovers make a nice addition to eggs in the morning.
